Jerk Chicken

 

 

 

3 scallions

Blend ingredients together

 

Marinate in sealed plastic bags, turning often.

 

Charcoal – open vents on bottm and top.  Use hot charcoal to sear chicken, 3 min per batch.  Move to side so not over direct heat and cover.  Cook for 30 minutes

 

Gas – preheat to high, adjust to moderate.  Brown and turn for 20 minutes.  Turn to low, cover, cook for 25-30 minutes or more.

4 large cloves garlic

1 sm onion, chopped

4 – 5 hot chillies, stemmed and seeded

¼ c fresh lime juice

2 tb soy sauce

3 tb olive oil

1 ½ tb salt

1 tb brown sugar

1 tb fresh thyme

2 ts ground allspice

2 ts black pepper

¾ ts fresh grated nutmeg

12 ts cinnamon
